A classic blend of the three noble varieties of premium, cold climate sparkling wine. The inclusion of Pinot Meunier adds texture to the middle palate and advances the maturation of the wine, a variety that is key to the unique character of this blend. The blend contains 15.5% aged reserve further building maturity and complexity into both the aroma and palate. The extended maturation on lees builds a level of complexity of global parity.

    Light to medium straw colour, retains a brilliant clarity and an ultra-fine and persistent bead.

    Exotic characters are drawn together in this captivating wine including lychee, white stone fruit, lanolin and oyster shell.

    A seamless palate of sophistication and poise, red fruit driven with generous flavours and texture. Secondary flavours of field mushroom and brioche build on the complexity and persistence.
  • Winemaking Notes

    94% of this blend is from 2016 vintage a year with excellent fruit yield. Blended from the classic sparkling grape varieties, handpicked and whole bunch pressed to ensure the remarkable brightness of character and structural elegance.

Winemaking Notes

All three varieties are hand harvested and upon reaching the winery, the fruit is bunch pressed with only the premium juice fractions selected for primary fermentation. A small portion of the wine is fermented in first and second use French oak(93% stainless steel and 7% oak), with 100% of the wine undergoing Malolactic Fermentation. The wine develops complexity and finesse with four years in tirage.

Extended maturation on yeast lees further built complexity and depth of character into the wine.
